Whole Grain Red Rice with Vegetables

Here’s one of the most beloved dishes by our customers at Oilbar&Bistro: Whole Grain Red Rice with Vegetables, enriched with the unmistakable aroma and flavor of Casaliva extra virgin olive oil. This dish not only satisfies the palate with intense flavors of fresh vegetables but also contributes to well-being thanks to the beneficial properties of extra virgin olive oil.

Ingredients for 4 people:

  • 500 g whole grain red rice
  • 1 red bell pepper
  • 2 medium zucchinis
  • 2 medium carrots
  • 200 g pumpkin
  • 1 small celeriac
  • 1 fennel bulb
  • Fresh chives
  • Casaliva extra virgin olive oil
  • Salt and pepper to taste

Method:

  1. Preparing the Vegetables: Dice or julienne the bell pepper, zucchinis, carrots, pumpkin, celeriac, and fennel bulb. In a pan with a drizzle of Casaliva extra virgin olive oil, sauté the vegetables over medium heat until they are tender-crisp and aromatic. Season with salt and pepper.
  2. Cooking the Rice: In a pot, bring salted water to a boil. Add the whole grain red rice and cook for about 25 minutes, until al dente. Drain well and let it cool slightly.
  3. Combining Vegetables and Rice: Transfer the rice to a large bowl and add the sautéed vegetables. Gently mix to combine all ingredients. Adjust seasoning with salt and pepper if necessary.
  4. Presentation and Serving: The whole grain red rice with vegetables can be served warm or cold, depending on preference. Before serving, drizzle generously with raw Casaliva extra virgin olive oil and sprinkle with chopped fresh chives.
