Artisan panettone with extra virgin olive oil
Together with Simone Forante, owner of L’angolo Della Gastronomia in Casaloldo (MN), we worked on a recipe that would allow us to replace almost entirely the butter with our extra virgin olive oil, respecting the traditional recipe.
Our panettone is soft, with a delicate taste, characterized by a pleasant and gentle scent.
The dough is super light and highly digestible.
Ingredients: wheat flour, candied lemon (lemon peel, glucose-fructose syrup, sugar), extra virgin olive oil 15%, sugar, egg yolk, dehydr. wheat mother yeast, km0 honey Corte Molinello, orange peel, butter, skimmed milk powder, flavorings, salt, yeast.
